leftover mashed potato mini muffins

vaguely conglomerated from the inter-toobs, made 28.

2 cups mashed potato (ish)
3 eggs
1/2 cup grated cheese (cheddar and romano)
1/4 cup grated cheese for topping (cheddar and romano)
good handful of chopped shallot greens
1/4 tsp or less paprika
small dust of cayenne pepper
black pepper
Salt to taste

Preheat oven to 200C. Grease mini-muffin pan with oil.  Mix it all up. Fill mini-muffin pan. Top with cheese. Bake for ~20 minutes.

Delicious straight out of the oven.

I think you could substitute different herbs / cheeses / finely diced ham or fried bacon etc.  as long as you pay attention to the salt.
