Chinese Lunar New Year Cake

H did some fast talking, and we agreed to make New Year cake.  I used this recipe.  I bought the wrong type of rice flour, but it still worked and was palatable.   I wonder if the different flour would change the consistency, as I had to add a lot of water to get the mix to a spreadable batter.  The coconut/milk/rice flavour was quite pleasant.   It would be worth getting a chunkier flaked coconut rather than desiccated coconut next time, and a half batch would be quite enough.

Next time H would like to try this recipe instead.
